Nothing beats the charm of welcoming the year 2027 in the mountains. Celebrate this year with us at the traditional New Year's Eve dinner in Caischavedra. Enjoy the culinary delights prepared by our chefs, paired with a good glass of wine, all amidst the incredible panoramic mountain views. The perfect way to end the year in style and welcome the new one.
Festive New Year's Eve menu:
Welcome Aperitif
A glass of champagne accompanied by peanuts, salted sticks, crispy chips, and homemade focaccia varieties
Appetizer and salad buffet
Grisons dried meat and alpine cheese platter with Bündnerfleisch, raw ham, regional alpine cheese, fig mustard, and walnuts
Game pâté with lingonberries and homemade nut bread
Venison carpaccio with juniper, pine nuts, and shaved alpine cheese
Hokkaido pumpkin with goat cheese and roasted pine nuts
Vitello tonnato with caper berries and sun-dried tomatoes
Winter salad buffet with leafy greens, raw vegetables, seeds, homemade dressings, and regional bread specialties
Intermediate course
Ricotta and alpine cheese ravioli in a light lemon butter sauce, roasted walnuts, and Parmesan
Main course
Two cuts of Swiss beef: pink-roasted entrecôte and tender braised Grisons beef roast with Pinot Noir jus, served with creamy potato gratin as well as glazed winter carrots, Brussels sprouts, and chestnuts
Vegetarian alternative
Grisons Pizokel with wild mushrooms, leeks, and alpine cheese
Dessert buffet
Grisons nut tart and chocolate tart, chestnut mousse with meringue, cinnamon apple compote with vanilla ricotta, panna cotta with mulled wine berries, fruit salad, and seasonal fruits
